Each year on the eve of the feast of St. Nicholas, Krampus walks the streets in search of naughty children to punish with "ruten", a bundle of birch sticks. Birch has a spicy flavor that's similar to root beer. We used crystal and special B malts for a rich, dried-fruit flavor, spicy (and appropriately German) Hellertau hops, flaked oats for body and mouthfeel, and, finally, milk sugar and birch extract for a creamy, root beer flavor.
